No Bake Mini Cheesecake Parfaits are quick and easy layered desserts featuring a graham cracker crust, creamy cheesecake filling, and fresh berries—perfect for patriotic celebrations like the 4th of July.
Ingredients
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 tbsp granulated sugar
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup fresh blueberries
- 1/2 cup fresh strawberries, chopped
- Extra berries for garnish
Instructions
- In a small bowl, mix graham cracker crumbs, melted butter, and granulated sugar until combined. Set aside.
- In a medium bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
- To assemble, spoon a layer of graham cracker crust into the bottom of mini cups or jars.
- Add a layer of cheesecake filling, followed by chopped strawberries.
- Add another layer of filling, then top with blueberries.
- Repeat layers if space allows, and finish with extra berries on top for garnish.
- Chill for at least 1 hour before serving.
Notes
- Use piping bags for neater layers.
- Can be made up to a day in advance and stored in the fridge.
- Try using mason jars for a charming presentation.
- Swap berries for other fruits based on the season.
