Peppermint Ice Cream Sandwiches are a festive and refreshing treat made with rich chocolate cookies and creamy peppermint ice cream. These handheld desserts are perfect for the holidays or a cool minty indulgence any time of year.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 pint peppermint ice cream
- Crushed peppermint candies (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream butter with granulated and brown sugars until light and fluffy. Beat in the egg and vanilla.
- Gradually mix in dry ingredients until combined. Chill dough for 30 minutes if too soft.
- Scoop dough into tablespoon-sized balls and place on baking sheets. Flatten slightly with your hand or a glass.
- Bake for 8–10 minutes or until set. Let cool completely on wire racks.
- Soften peppermint ice cream slightly. Scoop about 2–3 tablespoons onto the flat side of one cookie, top with another cookie, and press gently to sandwich.
- Roll edges in crushed peppermint candies if desired. Freeze until firm before serving.

- Make cookies ahead and freeze for easy assembly later.
- Try using chocolate mint or vanilla ice cream for variations.
- Wrap sandwiches individually in plastic wrap for storage.
