Ingredients
- 1 loaf (about 1 lb) day-old French or Italian bread, cut into 1-inch cubes
- 1/2 cup unsalted butter
- 1 large onion, finely chopped
- 3 celery stalks, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons dried sage
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 2 1/2 to 3 cups chicken or vegetable broth
- 2 large eggs, beaten
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat oven to 300°F (150°C). Spread bread cubes on a baking sheet and toast in the oven for 20-25 minutes, stirring occasionally, until dry and crisp. Let cool. Increase oven temperature to 350°F (175°C).
- In a large skillet over medium heat, melt butter. Add onion and celery, and cook until softened, about 8 minutes. Add garlic and cook 1 minute more.
- Stir in sage, thyme, rosemary, salt, and pepper. Remove from heat.
- In a large bowl, combine toasted bread cubes with the cooked vegetable mixture. Add broth gradually, tossing until bread is moistened but not soggy.
- Stir in beaten eggs and fresh parsley, if using. Mix well.
- Transfer mixture to a greased 9×13-inch baking dish. Cover with foil and bake for 30 minutes.
- Remove foil and bake an additional 15-20 minutes, until the top is golden brown and crisp.
- Serve hot as a side dish.
