Description

Peruvian Chicken with Green Sauce (Aji Verde) is a flavorful, zesty dish featuring roasted or grilled chicken served with a spicy, creamy green sauce made from cilantro, jalapeños, and mayonnaise. It’s a popular dish in Peru, perfect for a vibrant and delicious meal.


Ingredients

  • 4 bone-in, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground turmeric (optional)
  • 1 lime, juiced
  • Fresh cilantro sprigs, for garnish (optional)


Instructions

  1. Preheat your oven to 425°F (220°C) if roasting, or preheat your grill if grilling the chicken.
  2. In a small bowl, combine olive oil, paprika, cumin, garlic powder, salt, pepper, and turmeric. Rub this spice mixture all over the chicken, ensuring it is well-coated. Let it marinate for at least 15 minutes (or up to 2 hours in the fridge).
  3. If roasting, place the chicken on a baking sheet and roast for 25-30 minutes, or until the internal temperature reaches 165°F (74°C). If grilling, cook the chicken for 6-7 minutes on each side, or until fully cooked through.
  4. While the chicken is cooking, prepare the Aji Verde sauce. In a blender or food processor, combine 1 cup of fresh cilantro, 1-2 jalapeños (seeds removed for less heat, if preferred), 1/2 cup mayonnaise, 2 tbsp sour cream, 1 clove garlic, 1 tbsp lime juice, and a pinch of salt. Blend until smooth. Adjust seasoning and consistency with extra lime juice or water, if necessary.
  5. Once the chicken is done, serve it with a generous portion of Aji Verde sauce drizzled on top or on the side for dipping. Garnish with fresh cilantro sprigs, if desired.
  6. Serve with rice, salad, or potatoes for a complete meal.

Notes

  • If you prefer a spicier sauce, leave the seeds in the jalapeños or add more to taste.
  • This dish can be made ahead; the Aji Verde sauce can be refrigerated for up to 3 days.
