Description
Poor Man Husband Casserole is a hearty, budget-friendly comfort dish made with layers of pasta, a creamy cheese mixture, savory ground beef, and tomato sauce. Perfect for feeding a hungry family on a weeknight.
Ingredients
- 8 oz egg noodles
- 1 lb ground beef
- 1 small onion, chopped
- 2 cups marinara or tomato sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup cottage cheese
- 2 cups shredded cheddar cheese
- Chopped parsley for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Cook egg noodles according to package directions. Drain and set aside.
- In a skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Drain excess fat.
- Add marinara sauce, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5–10 minutes.
- In a bowl, combine sour cream and cottage cheese. Stir until well blended.
- Layer half of the noodles in the bottom of the baking dish. Spread the cheese mixture over the noodles. Add the remaining noodles on top.
- Pour the beef and sauce mixture over the noodles and spread evenly.
- Top with shredded cheddar cheese.
- Bake uncovered for 20–25 minutes, or until hot and bubbly.
- Let rest 5 minutes before serving. Garnish with parsley if desired.

- Use ground turkey or chicken as a lighter alternative to beef.
- Can be assembled ahead and refrigerated before baking.
