Description

A colorful and fun appetizer or snack made with fresh vegetables, spread on a tortilla and rolled into pinwheels for a vibrant, healthy bite.


Ingredients

  • 4 large whole wheat tortillas
  • 1/2 cup cream cheese, softened
  • 1/4 cup hummus
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup yellow bell pepper, finely diced
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup carrots, julienned
  • 1/4 cup spinach leaves
  • 1/4 cup purple cabbage, shredded
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together the cream cheese and hummus until smooth and well combined.
  2. Spread a thin layer of the cream cheese mixture on each tortilla.
  3. Sprinkle the shredded cheddar cheese evenly over the cream cheese layer.
  4. Layer the diced red and yellow bell peppers, cucumber slices, julienned carrots, spinach leaves, and shredded purple cabbage in colorful rows on top of the cheese.
  5. Season with a pinch of salt and pepper.
  6. Roll up each tortilla tightly, ensuring all the veggies are secure inside.
  7. Slice the rolled tortillas into 1-inch pinwheels and arrange on a serving plate.
  8. Serve immediately or refrigerate for 30 minutes before serving for easier slicing.

Notes

  • For extra protein, you can add cooked chicken or turkey slices.
