- 4 large whole wheat tortillas
- 1/2 cup cream cheese, softened
- 1/4 cup hummus
- 1/2 cup shredded cheddar cheese
- 1/4 cup red bell pepper, finely diced
- 1/4 cup yellow bell pepper, finely diced
- 1/4 cup cucumber, thinly sliced
- 1/4 cup carrots, julienned
- 1/4 cup spinach leaves
- 1/4 cup purple cabbage, shredded
- Salt and pepper to taste
Instructions
- In a small bowl, mix together the cream cheese and hummus until smooth and well combined.
- Spread a thin layer of the cream cheese mixture on each tortilla.
- Sprinkle the shredded cheddar cheese evenly over the cream cheese layer.
- Layer the diced red and yellow bell peppers, cucumber slices, julienned carrots, spinach leaves, and shredded purple cabbage in colorful rows on top of the cheese.
- Season with a pinch of salt and pepper.
- Roll up each tortilla tightly, ensuring all the veggies are secure inside.
- Slice the rolled tortillas into 1-inch pinwheels and arrange on a serving plate.
- Serve immediately or refrigerate for 30 minutes before serving for easier slicing.
Notes
- For extra protein, you can add cooked chicken or turkey slices.
