Description

Red White and Blue Popsicles are refreshing, patriotic frozen treats made with layers of strawberry, coconut, and blueberry for a naturally colorful and healthy snack—perfect for summer celebrations like the 4th of July.


Ingredients

  • 1 cup fresh or frozen strawberries
  • 2 tbsp honey or maple syrup (divided)
  • 1/2 cup coconut milk (full fat)
  • 1/2 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1/4 cup water (divided)


Instructions

  1. In a blender, combine strawberries, 1 tbsp honey or syrup, and 2 tbsp water. Blend until smooth.
  2. Pour the strawberry layer into the bottom third of popsicle molds. Freeze for 30–45 minutes until partially set.
  3. Mix coconut milk with 1 tbsp honey or syrup and vanilla extract. Pour gently over the strawberry layer to fill the next third of the mold. Freeze again for 30–45 minutes.
  4. Blend blueberries with 2 tbsp water until smooth. Pour the blueberry layer on top of the coconut layer to fill the molds.
  5. Insert sticks and freeze the popsicles for at least 4 hours or until fully solid.
  6. To release, run warm water over the molds for a few seconds and gently pull out the popsicles.

Notes

  • Use silicone molds for easy removal.
  • Adjust sweetness to taste depending on fruit ripeness.
  • Can be made vegan by using maple syrup.
  • Try other fruits like raspberries or blackberries for variation.
