Description

Rich and Creamy Italian Soup is a hearty and comforting dish packed with savory sausage, tender potatoes, leafy greens, and a creamy broth — perfect for a cozy dinner any night of the week.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 cups diced potatoes
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 2 cups chopped kale or spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (optional)
  • Red pepper flakes for garnish (optional)


Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon. Remove and set aside.
  2. Add onion to the pot and sauté until translucent, about 4 minutes. Stir in garlic and cook for another 30 seconds.
  3. Pour in chicken broth, add potatoes and Italian seasoning. Bring to a boil, then reduce heat and simmer for 10–15 minutes, or until potatoes are tender.
  4. Return sausage to the pot. Stir in kale or spinach and cook until wilted, about 2–3 minutes.
  5. Reduce heat to low and stir in heavy cream and Parmesan cheese, if using. Simmer gently for 2–3 minutes. Do not boil.
  6. Season with salt and pepper to taste. Serve hot, garnished with red pepper flakes if desired.

Notes

  • Substitute ground turkey or chicken sausage for a lighter version.
  • For extra richness, add a splash of white wine while sautéing the onions.
  • Leftovers taste even better the next day after flavors meld.
