- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups diced potatoes (Yukon gold or russet)
- 6 cups chicken broth
- 1 cup heavy cream
- 4 cups chopped kale, stems removed
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add diced onion and cook until softened, about 4 minutes. Stir in garlic and cook for 1 more minute.
- Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes or until potatoes are tender.
- Stir in heavy cream and chopped kale. Cook for another 5–7 minutes until kale is wilted and tender.
- Season with salt, pepper, and red pepper flakes to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
Notes
- Use turkey or chicken sausage for a lighter version.
- Substitute spinach for kale if preferred, but add it near the end of cooking.
- For a dairy-free version, omit cream or use coconut milk.
