Description

Sausage, Potato, and Kale Soup is a hearty, comforting one-pot meal made with savory sausage, tender potatoes, and nutrient-rich kale in a flavorful broth—perfect for chilly days.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups diced potatoes (Yukon gold or russet)
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 4 cups chopped kale, stems removed
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion and cook until softened, about 4 minutes. Stir in garlic and cook for 1 more minute.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes or until potatoes are tender.
  4. Stir in heavy cream and chopped kale. Cook for another 5–7 minutes until kale is wilted and tender.
  5. Season with salt, pepper, and red pepper flakes to taste.
  6. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

  • Use turkey or chicken sausage for a lighter version.
  • Substitute spinach for kale if preferred, but add it near the end of cooking.
  • For a dairy-free version, omit cream or use coconut milk.
