Description

Skillet Zucchini and Mushrooms is a quick, healthy side dish made with fresh zucchini and savory mushrooms sautéed in garlic and herbs. Perfect alongside grilled meats or as a light vegetarian meal.


Ingredients

  • 2 tablespoons olive oil
  • 2 medium zucchinis, sliced into half-moons
  • 8 oz mushrooms, sliced (white or cremini)
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add mushrooms and cook for 4–5 minutes, stirring occasionally, until they begin to brown and release moisture.
  3. Add zucchini, garlic, thyme, salt, and pepper. Cook for another 5–7 minutes, stirring often, until zucchini is tender but not mushy.
  4. Taste and adjust seasoning as needed.
  5. Garnish with chopped fresh parsley and serve warm.
