Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 3/4 cup uncooked wild rice blend
- 1 medium onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup heavy cream or half-and-half
- 2 tablespoons flour (optional, for thickening)
- 2 tablespoons butter (optional, for thickening)
Instructions
- Place chicken, wild rice, onion, carrots, celery, garlic, broth, thyme, parsley, salt, and pepper into the slow cooker.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until chicken is cooked through and rice is tender.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Optional: In a small saucepan, melt butter and whisk in flour to create a roux. Cook for 1-2 minutes, then slowly whisk in the cream to thicken.
- Stir the cream (and roux if using) into the soup and cook on high for an additional 15-20 minutes until heated through and slightly thickened.
- Adjust seasoning as needed and serve warm.
Notes
- Use rotisserie chicken to reduce cooking time and add extra flavor.
- For a dairy-free version, use a non-dairy milk or omit cream.
- Soup thickens as it sits; add more broth or water when reheating if needed.
