Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, cream cheese, and granulated sugar until light and fluffy.
- Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Scoop tablespoon-sized portions of dough onto prepared baking sheets.
- Bake for 10-12 minutes or until edges are set but centers are still soft.
- Let cookies cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
- For the glaze, whisk together powdered sugar and lemon juice until smooth.
- Drizzle glaze over cooled cookies and let set before serving.
