Description

Sopa de Albóndigas is a traditional Mexican meatball soup featuring tender beef or pork meatballs simmered with vegetables in a flavorful broth.


Ingredients

  • 1 lb ground beef
  • 1/2 cup cooked rice
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup chopped cilantro
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 zucchinis, diced
  • 1 potato, peeled and cubed
  • 1/2 onion, chopped
  • 1 can (8 oz) tomato sauce
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1/2 tsp chili powder (optional)

Instructions

  1. In a bowl, mix ground beef, rice, egg, garlic, cilantro, cumin, salt, and pepper. Form into small meatballs.
  2. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  3. Add tomato sauce, oregano, chili powder, and chicken broth. Bring to a simmer.
  4. Gently add meatballs to the broth. Simmer for 10 minutes.
  5. Add carrots, potatoes, and cook for another 10 minutes.
  6. Add zucchini and cook for an additional 5 minutes until all vegetables and meatballs are fully cooked.
  7. Adjust seasoning with salt and pepper if needed. Serve hot.

Notes

  • For extra flavor, add a bay leaf while simmering the broth.
  • Use ground turkey for a lighter version.
  • Fresh lime and chopped cilantro make great garnishes.
