Description
Spaghetti Carbonara is a classic Italian pasta dish made with eggs, cheese, pancetta, and pepper for a rich, creamy, and comforting meal.
Ingredients
- 12 oz spaghetti
- 4 oz pancetta or guanciale, diced
- 2 large eggs
- 1 large egg yolk
- 1 cup freshly grated Parmesan or Pecorino Romano cheese
- 1 teaspoon freshly ground black pepper
- Salt, to taste
Instructions
- Cook spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a skillet over medium heat, cook pancetta until crispy. Remove from heat.
- In a bowl, whisk together eggs, egg yolk, grated cheese, and black pepper.
- Quickly toss hot pasta with pancetta and rendered fat in the skillet.
- Remove skillet from heat and stir in the egg mixture, adding reserved pasta water a little at a time to create a creamy sauce.
- Serve immediately with extra cheese and pepper, if desired.
Notes
- Use high-quality cheese for best flavor.
- Do not overheat the eggs to avoid scrambling.
- Traditional carbonara does not contain cream or garlic.
