Description

Spaghetti Carbonara is a classic Italian pasta dish made with eggs, cheese, pancetta, and pepper for a rich, creamy, and comforting meal.


Ingredients

  • 12 oz spaghetti
  • 4 oz pancetta or guanciale, diced
  • 2 large eggs
  • 1 large egg yolk
  • 1 cup freshly grated Parmesan or Pecorino Romano cheese
  • 1 teaspoon freshly ground black pepper
  • Salt, to taste


Instructions

  1. Cook spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a skillet over medium heat, cook pancetta until crispy. Remove from heat.
  3. In a bowl, whisk together eggs, egg yolk, grated cheese, and black pepper.
  4. Quickly toss hot pasta with pancetta and rendered fat in the skillet.
  5. Remove skillet from heat and stir in the egg mixture, adding reserved pasta water a little at a time to create a creamy sauce.
  6. Serve immediately with extra cheese and pepper, if desired.

Notes

  • Use high-quality cheese for best flavor.
  • Do not overheat the eggs to avoid scrambling.
  • Traditional carbonara does not contain cream or garlic.
