Description

A thick and hearty split pea soup made with green split peas, vegetables, and savory herbs, simmered until creamy and satisfying—perfect for a warming, nutritious meal.


Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • 2 cups dried green split peas, rinsed
  • 6 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Optional: 1 cup diced ham or smoked sausage
  • Chopped parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5-6 minutes.
  2. Stir in garlic, thyme, oregano, and bay leaf, cooking for 1 minute.
  3. Add split peas and broth. Bring to a boil, then reduce heat and simmer uncovered for 1 to 1.5 hours, or until peas are very soft and soup is thickened.
  4. Stir occasionally and add more broth or water as needed to reach desired consistency.
  5. Remove bay leaf. For a smoother texture, blend part of the soup using an immersion blender.
  6. Season with salt and pepper to taste. Stir in ham or sausage if using, and heat through.
  7. Serve hot, garnished with chopped parsley if desired.

Notes

  • This soup thickens significantly as it cools—add broth when reheating.
  • For a vegetarian version, skip the ham and use vegetable broth.
  • Split peas do not require soaking, but rinsing is recommended.
