- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- Powdered sugar, for rolling
- Gel food coloring in pastel shades (pink, yellow, green, blue)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extract.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Divide dough into 4 portions and tint each with a different pastel gel food coloring.
- Chill dough for 30 minutes to make it easier to handle.
- Roll dough into 1-inch balls, then roll each ball in powdered sugar until fully coated.
- Place balls on prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until edges are set and tops have a crackled appearance.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use gel food coloring for vibrant pastel shades without altering dough consistency.
- Do not overbake—cookies should be soft in the center.
- Store in an airtight container for up to 5 days.
