Description

Strawberry Avocado Corn Salad is a fresh, colorful summer salad made with sweet strawberries, creamy avocado, grilled corn, and a zesty lime dressing—perfect for picnics, BBQs, or a light, healthy meal.


Ingredients

  • 1 avocado, diced
  • 1 cup grilled corn kernels (from about 2 ears of corn)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. If using fresh corn, grill it for 5–7 minutes, then slice off the kernels once cooled.
  2. In a large bowl, combine strawberries, avocado, corn, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
