Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1 avocado, diced
- 1 cup grilled corn kernels (from about 2 ears of corn)
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and black pepper to taste
Instructions
- If using fresh corn, grill it for 5–7 minutes, then slice off the kernels once cooled.
- In a large bowl, combine strawberries, avocado, corn, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Drizzle the dressing over the salad and gently toss to combine.
- Serve immediately or chill for up to 30 minutes before serving.
