- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup freeze-dried strawberries, crushed
- For the filling:
- 4 oz cream cheese, softened
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Scoop into small 1/2-teaspoon balls and freeze for 20 minutes.
- In a large bowl, cream butter and sugar until fluffy. Beat in egg and vanilla.
- In another bowl, whisk flour, baking powder, salt, and crushed freeze-dried strawberries.
- Gradually add dry ingredients to wet ingredients until a dough forms.
- Scoop 1.5-tablespoon balls of dough, flatten, and place a frozen cream cheese center in the middle. Wrap dough around filling and seal.
- Place on baking sheet and bake for 11–13 minutes, or until edges are lightly golden.
- Cool for 5 minutes on the pan, then transfer to a wire rack to cool completely.
Notes
- Freeze-dried strawberries provide intense flavor without extra moisture.
- Chill the dough for 15–30 minutes for easier handling if too sticky.
- Store in an airtight container in the refrigerator for up to 5 days.
