- 4 cups corn kernels (fresh, frozen, or canned)
- 1 tablespoon olive oil
- 1/3 cup mayonnaise
- 2 tablespoons sour cream
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1 tablespoon lime juice
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup finely diced red onion
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat. Add corn and cook until slightly charred, about 5-7 minutes. Let cool slightly.
- In a large bowl, whisk together mayonnaise, sour cream, chili powder, paprika, and lime juice.
- Add the cooked corn, cotija cheese, cilantro, and red onion to the bowl. Toss to combine.
- Season with salt and pepper to taste.
- Chill for 15-30 minutes before serving for best flavor. Serve cold or at room temperature.
Notes
- Use grilled corn on the cob for an extra smoky flavor.
- You can substitute feta cheese if cotija is unavailable.
