Ingredients
Sweet Potato Fritters:
- 2 cups grated sweet potato (about 1 large)
- 1/4 cup finely chopped green onion
- 1/4 cup chopped cilantro
- 1 egg
- 1/4 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil (for cooking)
Jalapeño Ranch:
- 1/2 cup ranch dressing
- 1 small jalapeño, seeded and chopped
- 1 tablespoon lime juice
- 1 tablespoon chopped fresh cilantro
Bliss Bowl Base:
- 2 cups cooked quinoa or brown rice
- 2 cups shredded romaine or mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 avocado, sliced
- 1/4 cup shredded carrots
- 1/4 cup roasted pepitas
Instructions
- Jalapeño Ranch: Blend ranch dressing, jalapeño, lime juice, and cilantro until smooth. Set aside.
- Sweet Potato Fritters: Combine all fritter ingredients in a bowl. Cook in olive oil until golden and crisp.
- Assemble Bowls: Layer quinoa, greens, fritters, cherry tomatoes, cucumber, avocado, carrots, and pepitas. Drizzle with jalapeño ranch.
