Description

Ingredients

Sweet Potato Fritters:

  • 2 cups grated sweet potato (about 1 large)
  • 1/4 cup finely chopped green onion
  • 1/4 cup chopped cilantro
  • 1 egg
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil (for cooking)

Jalapeño Ranch:

  • 1/2 cup ranch dressing
  • 1 small jalapeño, seeded and chopped
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro

Bliss Bowl Base:

  • 2 cups cooked quinoa or brown rice
  • 2 cups shredded romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 avocado, sliced
  • 1/4 cup shredded carrots
  • 1/4 cup roasted pepitas


Instructions

  1. Jalapeño Ranch: Blend ranch dressing, jalapeño, lime juice, and cilantro until smooth. Set aside.
  2. Sweet Potato Fritters: Combine all fritter ingredients in a bowl. Cook in olive oil until golden and crisp.
  3. Assemble Bowls: Layer quinoa, greens, fritters, cherry tomatoes, cucumber, avocado, carrots, and pepitas. Drizzle with jalapeño ranch.

Notes
