- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons sriracha sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- 1/2 teaspoon ground black pepper
- Wooden or metal skewers
Instructions
- In a medium bowl, whisk together soy sauce, honey, sriracha, olive oil, garlic, lime juice, and black pepper.
- Add chicken cubes to the marinade and refrigerate for at least 30 minutes, up to 2 hours.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- Thread chicken, pineapple, and bell pepper alternately onto skewers.
- Grill skewers for 10-12 minutes, turning occasionally, until chicken is fully cooked and lightly charred.
- Brush with remaining marinade during grilling, if desired.
- Remove from grill and let rest for a few minutes before serving.
Notes
- Substitute chicken thighs for a juicier texture.
- Use canned pineapple if fresh is unavailable, but drain well.
- Adjust sriracha to your preferred spice level.
- Serve with rice or grilled vegetables for a full meal.
