Description

Sweet Potato Casserole with Marshmallows is a classic holiday side dish featuring creamy mashed sweet potatoes sweetened with brown sugar and topped with gooey marshmallows and a hint of spice.


Ingredients

  • 4 cups mashed sweet potatoes (about 4 large sweet potatoes)
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Peel, chop, and boil sweet potatoes in a large pot until fork-tender, about 15–20 minutes. Drain and mash well.
  3. In a large bowl, mix mashed sweet potatoes with brown sugar, melted butter, milk, eggs, vanilla, cinnamon, and salt until smooth and fully combined.
  4. Pour the sweet potato mixture into the prepared baking dish and spread evenly.
  5. Bake for 25–30 minutes, or until the center is set and the top is slightly golden.
  6. Remove from oven and top evenly with mini marshmallows.
  7. Return to oven and bake an additional 5–10 minutes, or until marshmallows are golden and melted.
  8. Let cool slightly before serving.

Notes

  • Can prepare the sweet potato mixture a day in advance and add marshmallows before baking.
  • Try adding a pecan crumble topping for extra texture and flavor.
  • Use canned sweet potatoes in a pinch—just reduce added sugar slightly.
