Description

Taco Spaghetti is a fun and flavorful fusion of Mexican and Italian cuisines, combining taco-seasoned ground beef with spaghetti noodles and a cheesy tomato sauce. It’s a one-pan, family-friendly dinner ready in under 30 minutes.

Ingredients

  • 8 oz spaghetti
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1 cup tomato sauce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  3. Stir in taco seasoning and water. Simmer for 2–3 minutes until thickened.
  4. Add diced tomatoes with green chilies and tomato sauce. Stir to combine.
  5. Mix in the cooked spaghetti and toss until well coated.
  6. Sprinkle both cheeses over the top. Cover and let sit for a few minutes until the cheese is melted.
  7. Garnish with chopped cilantro or green onions, if desired, and serve hot.

Notes

  • Use ground turkey or chicken as a lighter alternative to beef.
  • Add corn, black beans, or bell peppers for extra texture and nutrition.
  • For a spicy kick, use hot taco seasoning or add jalapeños.
