- 1 tbsp olive oil
- 1 lb ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
- Add onion, garlic, and bell pepper. Cook for 5-6 minutes until softened.
- Stir in beans, diced tomatoes, tomato paste, and beef broth.
- Add chili powder, cumin, paprika, oregano, cayenne (if using), salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 30-40 minutes, stirring occasionally, until thickened.
- Taste and adjust seasoning. Serve hot with optional toppings.
Notes
- For a spicier version, add more cayenne or a chopped jalapeño.
- Chili tastes even better the next day after the flavors meld.
- Can be made in a slow cooker after browning the beef and sautéing the veggies.
