Description

A rich and hearty classic chili made with ground beef, beans, tomatoes, and a bold blend of spices, simmered to perfection for the ultimate comfort food dish.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  2. Add onion, garlic, and bell pepper. Cook for 5-6 minutes until softened.
  3. Stir in beans, diced tomatoes, tomato paste, and beef broth.
  4. Add chili powder, cumin, paprika, oregano, cayenne (if using), salt, and pepper. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer uncovered for 30-40 minutes, stirring occasionally, until thickened.
  6. Taste and adjust seasoning. Serve hot with optional toppings.

Notes

  • For a spicier version, add more cayenne or a chopped jalapeño.
  • Chili tastes even better the next day after the flavors meld.
  • Can be made in a slow cooker after browning the beef and sautéing the veggies.
