- 2 lbs ground beef (85% lean)
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 3/4 cup milk
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup ketchup (for glaze)
- 2 tbsp brown sugar (for glaze)
- 1 tbsp apple cider vinegar (for glaze)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, 1/4 cup ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined.
- Shape the mixture into a loaf on the prepared baking sheet or press into a loaf pan.
- In a small bowl, mix 1/2 cup ketchup, brown sugar, and vinegar. Spread half over the top of the meatloaf.
- Bake for 45 minutes, then spread remaining glaze on top and bake an additional 15 minutes, or until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing and serving.
Notes
- Use a mix of ground beef and pork for extra flavor if desired.
- Don’t overmix the meat to avoid a dense loaf.
- Leftovers make excellent sandwiches the next day.
