Ingredients

  • 2 lbs ground beef (85% lean)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tbsp apple cider vinegar (for glaze)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, 1/4 cup ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf on the prepared baking sheet or press into a loaf pan.
  4. In a small bowl, mix 1/2 cup ketchup, brown sugar, and vinegar. Spread half over the top of the meatloaf.
  5. Bake for 45 minutes, then spread remaining glaze on top and bake an additional 15 minutes, or until internal temperature reaches 160°F (71°C).
  6. Let rest for 10 minutes before slicing and serving.

Notes

  • Use a mix of ground beef and pork for extra flavor if desired.
  • Don’t overmix the meat to avoid a dense loaf.
