Description

Tuscan Artichoke Tomato Salad is a rustic and flavorful Italian-inspired dish made with marinated artichoke hearts, juicy tomatoes, fresh herbs, and a simple vinaigrette—perfect as a light side or appetizer.


Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Optional: shaved Parmesan for garnish

Instructions

  1. In a large bowl, combine artichoke hearts, cherry tomatoes, red onion, and basil.
  2. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and pepper.
