Description

  • 1 cup warm milk (110°F)
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 tsp vanilla extract
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a small bowl, dissolve the yeast in warm milk and let it sit for 5-10 minutes until foamy.
  2. In a large bowl, combine flour, sugar, and salt.
  3. Whisk in eggs, melted butter, vanilla extract, and the yeast mixture until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 to 1.5 hours or until doubled in size.
  6. Punch down the dough and roll it out to about 1/4-inch thickness.
  7. Cut into 2-inch squares and place on a floured baking sheet. Cover and let rise for another 30 minutes.
  8. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  9. Fry the beignets in batches until golden brown on both sides, about 2-3 minutes per side.
  10. Remove with a slotted spoon and drain on paper towels. Dust generously with powdered sugar and serve warm.

Notes

  • Make sure the milk is warm, not hot, to activate the yeast properly.
  • You can flavor the dough with a touch of cinnamon or nutmeg for variety.
