- 1 cup warm milk (110°F)
- 2 1/4 tsp active dry yeast
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 2 tsp vanilla extract
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a small bowl, dissolve the yeast in warm milk and let it sit for 5-10 minutes until foamy.
- In a large bowl, combine flour, sugar, and salt.
- Whisk in eggs, melted butter, vanilla extract, and the yeast mixture until a dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 to 1.5 hours or until doubled in size.
- Punch down the dough and roll it out to about 1/4-inch thickness.
- Cut into 2-inch squares and place on a floured baking sheet. Cover and let rise for another 30 minutes.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the beignets in batches until golden brown on both sides, about 2-3 minutes per side.
- Remove with a slotted spoon and drain on paper towels. Dust generously with powdered sugar and serve warm.
Notes
- Make sure the milk is warm, not hot, to activate the yeast properly.
- You can flavor the dough with a touch of cinnamon or nutmeg for variety.
- Serve with fruit preserves or chocolate sauce for extra indulgence.
