Description

Vegan Love Letter Pastries are charming, heartwarming treats made with flaky puff pastry filled with sweet fruit preserves. Shaped like envelopes and sealed with a fruit ‘stamp,’ they’re perfect for Valentine’s Day or any romantic occasion.


Ingredients

  • 1 sheet vegan puff pastry, thawed
  • 1/4 cup fruit preserves or jam (e.g., raspberry, strawberry)
  • 1 tablespoon plant-based milk (for brushing)
  • 1 tablespoon powdered sugar (optional, for dusting)
  • Fresh raspberries or strawberry slices (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface and cut into 4 equal rectangles.
  3. Place 1 tablespoon of jam in the center of each rectangle.
  4. Fold the bottom edge up, the side corners inward, and the top edge down to form an envelope shape.
  5. Seal gently and place a small piece of fruit or dot of jam where the envelope ‘flap’ meets.
  6. Brush lightly with plant-based milk for a golden finish.
  7. Transfer to the prepared baking sheet and bake for 15–18 minutes, or until golden and puffed.
