Ingredients
- 1 sheet vegan puff pastry, thawed
- 1/4 cup fruit preserves or jam (e.g., raspberry, strawberry)
- 1 tablespoon plant-based milk (for brushing)
- 1 tablespoon powdered sugar (optional, for dusting)
- Fresh raspberries or strawberry slices (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface and cut into 4 equal rectangles.
- Place 1 tablespoon of jam in the center of each rectangle.
- Fold the bottom edge up, the side corners inward, and the top edge down to form an envelope shape.
- Seal gently and place a small piece of fruit or dot of jam where the envelope ‘flap’ meets.
- Brush lightly with plant-based milk for a golden finish.
- Transfer to the prepared baking sheet and bake for 15–18 minutes, or until golden and puffed.
- Let cool slightly, then dust with powdered sugar if desired.
