Description
Warm up with a comforting bowl of White Chicken Chili, a creamy and hearty soup loaded with tender chicken, white beans, corn, and aromatic spices.
Ingredients
For the White Chicken Chili:
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, diced
- 1 (4-ounce) can diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon chili powder
- ½ teaspoon ground coriander
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 (15-ounce) cans white beans, drained and rinsed
- 1 cup frozen corn
- 3 cups low-sodium chicken broth
- ½ cup sour cream
- ½ cup heavy cream or half-and-half
- juice of 1 lime
- chopped fresh cilantro for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 4–5 minutes until soft.
- Stir in the garlic and cook for another 30 seconds.
- Add diced chicken and cook until no longer pink, about 5–6 minutes.
- Stir in green chilies, cumin, oregano, chili powder, coriander, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Add white beans, corn, and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
- Stir in sour cream and heavy cream and simmer for another 5 minutes until heated through.
- Stir in lime juice and garnish with chopped cilantro if desired.
Notes
- For a creamier texture, mash a portion of the beans before adding to the pot.
- You can also use shredded rotisserie chicken for convenience.
