These White Chocolate Blueberry Crumble Bars are a delicious dessert featuring a buttery oat crumble, sweet blueberry filling, and creamy white chocolate drizzle.

- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 1/2 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, melted
- 1 1/2 cups fresh or frozen blueberries
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour, oats, brown sugar, salt, and baking powder.
- Pour in melted butter and stir until the mixture is crumbly.
- Press two-thirds of the crumble mixture into the bottom of the prepared pan to form the crust.
- In another bowl, combine blueberries, granulated sugar, lemon juice, and cornstarch. Mix well.
- Spread the blueberry mixture evenly over the crust.
- Sprinkle the remaining crumble mixture over the top.
- Bake for 30-35 minutes or until the top is golden brown and the blueberries are bubbling.
- Remove from oven and let cool completely in the pan.
- Melt the white chocolate chips and drizzle over the cooled bars.
- Refrigerate for at least 1 hour before slicing into bars.
Notes
- You can use frozen blueberries; no need to thaw them.
- For a sweeter touch, increase the white chocolate drizzle.
- Store bars in the refrigerator for up to 5 days.
